Thanks M120. I respect whatever one's opinion is on the NFL. I enjoy the game, and there have been some awesome playoff games this season. Aaron Donald and Tyler Boyd are local kids who went to Pitt, and it's cool one of them will get to hoist the Lombardi.
I'm watching the game with one of my bddies since first grade and one of his sons and friends. It's tradition for us.
Mikey, lol, I was hoping to find a good recipe for a queso dip like good Mexican restaurant makes. I thought about playing with a cojita and some other cheeses then adding cooked crumbled chorizo, but I want to test first. My go to has been cream cheese spread over a glass 9x13, followed by a jar of salsa, and topped with a half pound of shredded pepper jack baked at 300 until bubbling. I want to go with something different and easier for a bigger crowd.

Al AlguireWeare doing ribs, chicken wings and pulled pork on the smoker. Homemade potato salad, and mac and cheese. Guacamole, mango salsa, spicy meatballs, charcuterie pate and queso for pregaming. We do all the cooking ourselves, mostly my son and I. Will have 35-40 people here and plenty of booze and beer. My sons buddies are gamblers, two of them professionally, so always makes for an interesting/entertaining game.
AS fr a queso recipe. lots of options depending on your level of kitchen skills.
Easy would be Velveeta and Rotel. Simply combine and melt, preferably in a crockpot,its quick and simple and tastes pretty darn good. Of you like you can ad things like onions, green chilis etc.
Another simple one that always goes over well is similar. In a large skillet, brown up pork(we usually use Jimmy Dean gold roll) sausage. Drain excess grease. Put into Crock Pot. Cube up Velveeta; add to crock pot. Add cream cheese(one block). Pour in Rotel (undrained). Cook on low until ready. Always a winner and again simple. Its sort of a queso fundido style dip.
If you have more advanced kitchen skills this s a good one. Its a bit more work and requires some babysitting for sure while cooking. We are opting for a version of the sausage one with some more add ins.

Then there’s 7 layer dip. Corn and Tortillas chips.
