Damn... down here in NC we buy our cheese from the grocery store or farmers market. You really wanna make it yourself?

Neighbors and I are planning to do a "taco bar". I'll probably smoke some chicken for it, and make some grilled salsa.

Most years I do a huge pot of chili, but its kind of played out as I make a smoked chili every few weeks. If you are interested in that, an "over the top" or "OTT" chili is pretty damn good. Put together your normal chili recipe but put the meat on a grate above the pot on the grill and smoke it with whatever wood you prefer. Slice or crumble your meat into the chili once it is ready and simmer on the grill for a bit longer. I say slice or crumble because sometimes i use ground beef or bison and other times it may be some chuck roast or other red meat. I wouldnt use a real fatty cut (or a hihg fat ground meat) as it will all accumulate in your chili and be too much.

Cooking is one of my hobbies....... I cook on the Kamado or Blackstone almost every night of the week.

I'm making reservations for my local sports bar. At halftime there is a trivia contest so we don't have to be insulted by the NFL's woke halftime show.
